- 1 large cucumber quartered
- 3 tablespoons fresh basil cut into thin strips
- 1 tablespoon lemon juice
- 2 teaspoons olive oil
- salt to taste
- ground black pepper to taste
Spread the quartered cucumber slices onto a towel. Pat dry to keep the salad from becoming watery. Set aside.
In a medium mixing bowl, combine the basil, lemon juice, and olive oil.
Add the cucumbers and toss gently to coat.
Season with salt and black pepper. Give it another gentle toss and adjust to taste.
Cover and refrigerate for 2 hours, or until cold. Serve chilled.
