Ingredients
  

  • 1 large cucumber quartered
  • 3 tablespoons fresh basil cut into thin strips
  • 1 tablespoon lemon juice
  • 2 teaspoons olive oil
  • salt to taste
  • ground black pepper to taste

Instructions
 

  • Spread the quartered cucumber slices onto a towel. Pat dry to keep the salad from becoming watery. Set aside.
  • In a medium mixing bowl, combine the basil, lemon juice, and olive oil.
  • Add the cucumbers and toss gently to coat.
  • Season with salt and black pepper. Give it another gentle toss and adjust to taste.
  • Cover and refrigerate for 2 hours, or until cold. Serve chilled.
